Michael's Weekly Recipe Pick


Last week's recipe was a big success! Michael was under pressure to follow-up with another great pick. This week he chose another recipe from the Weber Real Grilling Cookbook. His pick was Bacon wrapped pork tenderloin medallions. They were so yummy!

Here are the step-by-step instructions:

Ingredients:

1 pound pork tenderloin
4 - 6 slices of bacon
1 teaspoon kosher salt
1 teaspoon black pepper
2 teaspoons paprika
2 teaspoons garlic powder
2 teaspoons onion powder

Instructions:

Combine the salt, pepper, paprika, onion powder and garlic powder to create a seasoning rub. 

Cut the tenderloins into medallions about 1 1/2 inches wide (the width of a slice of bacon). Rub the seasoning mixture on all sides of the medallions. Wrap a piece of bacon around each piece of pork and secure with a toothpick. The bacon should overlap at the ends by no more than an inch.

Grill the pork over direct medium heat for 12 - 15 minutes.
