Family Favorite Recipe: Turkey Meatballs


These meatballs are so yummy and are super easy since they are baked. I like to double the recipe sometimes so that I can get 2 meals for that week and freeze the rest for another 2 meals down the road. I hadn't made these in such a long time, they tasted better than ever! Here's the recipe and step-by-step instructions.

Ingredients:

1/4 cup Italian bread crumbs
2 large eggs, lightly beaten
2 tablespoons milk
3/4 cup shredded mozzarella or Italian blend cheese
1/4 cup chopped flat-leaf parsley
Salt and freshly ground black pepper to taste
1 pound ground turkey
1 tablespoon extra-virgin olive oil


Preheat oven to 375 degrees.In a large bowl, add ground turkey, bread crumbs, eggs, milk, parsley, cheese, olive oil, salt and pepper.

Mix ingredients well and gently combine, being careful not to overwork the meat. 

Shape into golf-size balls. Bake meatballs for about 30 minutes flipping once about half way through.
