New recipe: Ranch chicken wraps


These wraps are so good! They make a quick and easy week night meal and would be great for lunches to bring to work as well. The chicken is really tender and flavorful. 

Ingredients for chicken:
2 chicken breasts
1/2 cup corn flake crumbs
1/2 cup bread crumbs
1/4 cup parmesan cheese
1/2 package of dry ranch dressing mix
1 egg

Wraps:
2 tortillas or flatbread wraps (these are my favorite!)
Romaine lettuce
Grape tomatoes
Colby jack cheese
Any other toppings you desire!

Ingredients

Preheat oven to 375 degrees. To make the chicken, pound the chicken breasts to tenderize

Combine, bread crumbs, cornflake crumbs, parmesan cheese and ranch packet contents. Mix 1 egg with 1/4 cup of water and whisk.

Dip chicken breasts into egg mixture and then dry breading mixture. Place onto cookie sheet with rack inserted.

Bake chicken for about 25 minutes, flipping about mid-way through.

Once chicken has cooled slightly, slice into thin strips. Place wrap or flatbread down, top with lettuce then your chicken, cheese and tomatoes if you prefer. Top with a drizzle of ranch dressing and roll closed. Michael adds red onion and avocado slices to his as well!
