New recipe: Mini Meatball Sandwiches


This recipe has been sitting starred on my Google reader for a long time. We were watching a cooking show on tv and they were making meatball sandwiches and it triggered my memory of these. I am so glad I remembered because these were delicious and so easy! These will definitely be added to the rotation. The only thing that I would change about these is that I would make the slider buns garlic bread and toast them up before adding the meatballs. Other than that, these are a winner!

Ingredients
1 pound ground beef (I used a beef/pork mixture)
1/2 cup panko breadcrumbs
1 clove of garlic, diced
Salt and pepper to taste
1/4 cup of milk
2 tbsp. olive oil
1/2 onion diced
1 jar of your favorite marinara sauce
12 slider buns
Sliced provolone cheese

Step by Step Directions

Ingredients

Combine ground beef and breadcrumbs in mixing bowl with garlic, salt and pepper and pour in milk

Knead mixture until combined

Use cookie scoop to keep consistent amount of mixture.

Roll into balls

Heat olive oil in skillet on medium heat and toss in diced onion.

Add meatballs to skillet and cook for about 2 minutes on each side, until they get browned.

Pour in jar marinara sauce.

Put the lid on and let the meatballs simmer for around 20 minutes.

Cut the provolone slices in quarters and split the slider buns

Place a slice of cheese on both the top and bottom of the slider buns.

Top with a meatball and let the cheese melt. Enjoy!
