Favorite Recipe: Homemade Basil Pesto

Our basil has been growing out of control with all the rain we have had so far this year, so we knew it was time to make some pesto! We love the pesto served with pasta and chicken but it is also really good on fish, pork chops, pork tenderloin or even steak. It is super easy to put together and is really flavorful.

Ingredients:

1 cup fresh basil, fully packed
1/4 cup Parmesan, grated
3 tbsp pine nuts
4 cloves, garlic minced
1/4 - 1/2 cup olive oil
salt & pepper to taste

Directions:

Using a food processor, combine all ingredients except for the olive oil and pulse several times to chop the leaves and blend the ingredients. 


While blending, stream the olive oil into the food processor until you get the right consistency.

Mix with pasta and chicken, add additional Parmesan cheese as garnish. Enjoy!
