New Recipe:Lemon Parmesan Crusted Cod


When we were at Whole Foods this weekend they had fresh caught cod on sale so we picked some up. We hadn't had fish in a while and we always do the same thing with it. I turned to Pinterest to find a new recipe to cook the fish. I found this recipe and I thought it looked perfect. I did make some tweaks to fit our tastes though. The fish came out amazing, it was crispy on the outside and flaky, tender and moist on the inside. You could do this with any fish too. Here's the recipe I came up with.

Ingredients
1 lb fresh cod
1 lemon, cut in half for squeezing
2 eggs
2 tbsp of butter, cubed
1 cup panko breadcrumbs
1/2 cup grated parmesan cheese
1 tbsp garlic powder
Salt and pepper to taste

Directions
1. Preheat oven to 350 degrees
2. Spray pan with non-stick cooking spray
3. Cut cod filets into portions
4. Season fish with salt and pepper to taste
5. Scramble eggs in bowl
6. In another bowl, mix panko with garlic powder
7. Dip fish into eggs then into panko mixture and place on pan
8. Repeat with other filets
9. On top each filet, sprinkle with parmesan cheese, a squeeze of lemon juice and 2-3 cubes of butter
10. Bake for 25 - 30 minutes until the fish is white, visibly flaky with a light golden color
11. Enjoy!
