I was inspired by this recipe I found on Pinterest, I changed a few things in my recipe below. Make sure you make all 3 components, they all come together really quickly and it is so worth it! I make the avocado sauce and slaw earlier in the day so they meld together during the day.
Ingredients
For the chicken:
1lb boneless skinless chicken, cubed in small pieces
1 packet taco seasoning
1 tsp onion powder
1 tsp garlic powder
1 pkg tortillas
For the avocado sauce:
1/2 an avocado, peeled, diced
1/8 tsp lime zest
1 lime juiced
1/4 cup sour cream
2 tbsp milk
For the slaw:
2 cups packaged slaw mix
1/2 cup thinly sliced green onions
1/4 chopped fresh cilantro
1 tbsp canola oil
1 tbsp vinegar
1/2 lime juiced
1/4 tsp salt
Directions
1. Place diced chicken in plastic bag and add taco mix, garlic powder, onion powder. Shake to coat chicken.
2. Heat a large skillet over high heat, coat with cooking spray, add chicken and cook 4 - 6 minutes until cooked through, stirring often.
3. To make the avocado cream sauce, combine the sour cream, milk, avocado, lime juice and zest in a food processor and process until smooth.
4. To make the slaw, combine slaw mix, green onions, cilantro, lime juice, vinegar, oil and salt, tossing to coat.
5. After chicken is cooked, divide chicken mixture evenly among tortillas, top each with about 1 tablespoon avocado sauce and 1/4 cup of slaw.
6. Enjoy!
