New recipe: Zucchini Bread


Michael's Mom gave him a slice of zucchini bread to bring home the other day along with a zucchini from her garden. After eating the zucchini bread, I really wanted to make my own. I found this great recipe and it was absolutely delicious! It tasted just like my Mom's recipe, which come to find out it's almost identical to her recipe! Even Michael liked it and he hates zucchini. This recipe comes together in just a few minutes and it makes 2 loaves. I froze one to have as a treat sometime this Fall or Winter.

Ingredients
3 cups all-purpose flour
1tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups sugar
3 tsps vanilla
2 cups grated zucchini
1 cup chopped pecans (you can use walnuts as well)

Instructions
1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees
2. Cream together eggs, oil, vanilla and sugar in a large bowl
3. Sift flour, salt, baking powder, baking soda and cinnamon together. Add to creamed mixture
4. Stir in zucchini and pecans until well combined
5. Pour batter into prepared pans
6. Bake for 45 - 60 minutes, or until tester in the center comes out clean
7. Cool in pan on rack for 20 minutes
8. Enjoy!
